  • 4 medium sweet potatoes (1214 ounces each)
  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • Toppings: shredded Mexican blend cheese, diced tomatoes, diced avocado or guacamole, sour cream

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef with the chopped onion and minced garlic. Drain excess grease.
  2. Add taco seasoning and salsa to the skillet, stirring well to combine. Simmer for about 5 minutes.
  3. Poke holes in each sweet potato and microwave on high for 8-10 minutes until tender.
  4. Once cooled slightly, slice each sweet potato lengthwise and fluff the insides with a fork.
  5. Spoon the taco meat mixture generously into each potato and top with cheese, diced tomatoes, avocado or guacamole, and sour cream.
