  • 2 medium zucchinis, sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Italian seasoning
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente; reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Sauté sliced zucchini for about 3–4 minutes until tender.
  3. Add halved cherry tomatoes and minced garlic to the skillet; cook until the tomatoes soften.
  4. Season with salt, black pepper, red pepper flakes (if using), and Italian seasoning. Toss in the drained pasta and mix well, adding reserved pasta water as needed for desired consistency.
  5. Stir in grated Parmesan cheese until melted and combine well. Fold in fresh basil before serving.
