  • ½ cup sugar
  • ¼ cup vegan butter
  • 2 tbsp vegan creamer (oat or soy)
  • 1 tsp vanilla extract
  • 1 cup flour
  • ½ cup nondairy mini chocolate chips
  • 1820 chocolate sandwich cookies
  • 1 cup nondairy chocolate chips
  • ½ cup peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a mixing bowl, cream together sugar and vegan butter until smooth. Mix in vegan creamer, vanilla extract, and gradually add brown sugar and nondairy milk.
  3. Stir in flour and mini chocolate chips until combined.
  4. Press half the cookie dough mixture into the prepared pan. Layer crushed chocolate sandwich cookies on top.
  5. Spread caramel over the cookie layer and crumble remaining cookie dough on top.
  6. Bake for about 25 minutes or until golden brown. Allow to cool completely before cutting into squares.
