  • 60g dairy-free softened butter
  • 4 tablespoons lemon juice
  • Zest of 1 large lemon
  • 200g plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 1 teaspoon turmeric or 2 drops yellow food gel

  3. In another bowl, combine plain flour, baking powder, bicarbonate of soda, and turmeric (or food gel). Stir well.
  4. Gradually mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Roll dough into balls about 1 inch in diameter and coat each ball with additional icing sugar.
  6. Place on a lined baking sheet and bake for 10–12 minutes until crackled on top.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.
