  • 1/3 cup tomato pizza sauce
  • 1 tablespoon dried mixed Italian herbs
  • 1 cup vegan mozzarella cheese (optional)
  • 1/2 cup red capsicum (finely chopped)
  • 1/2 cup mushrooms (finely chopped)
  • 1/2 cup baby spinach leaves (finely chopped)
  • 1/4 cup sun-dried tomatoes (finely chopped)
  • 3 tablespoons extra virgin olive oil (for topping)
  • 2 teaspoons dried mixed Italian herbs (for topping)

Instructions

  1. In a mixing bowl, combine warm water and sugar. Add yeast and let it froth for 5–10 minutes.
  2. Mix in flour, olive oil, and salt until a dough forms. Knead for 5–7 minutes until smooth.
  3. Let the dough rise in an oiled bowl covered with a damp cloth for about an hour.
  4. Prepare the filling by combining tomato sauce, herbs, chopped veggies, and cheese.
  5. Roll out the dough into a rectangle, spread the filling evenly, roll tightly, and slice into pieces.
  6. Bake at 400°F (200°C) for 15 minutes or until golden brown.
