  • 5 cups simmering water
  • 2 1/2 to 3 3/4 cups organic all-purpose flour
  • 1 packet (0.25 oz) active dry yeast
  • 2 tbsp cane sugar
  • 2 tbsp melted vegan butter (plus more for topping)
  • 1 cup slightly warm water
  • 1 tsp salt
  • Coarse salt for topping

Instructions

  1. In a mixing bowl, combine slightly warm water (about 110°F) and sugar until dissolved. Sprinkle yeast on top; do not stir. Let it sit for about 10 minutes until frothy.
  2. Stir in melted vegan butter, then add salt and flour one cup at a time until a dough forms. If sticky, add more flour until manageable.
  3. Knead the dough on a floured surface for 3-5 minutes until firm.
  4. Place in an oiled bowl, cover, and let rise in a warm spot for one hour.
  5. Preheat oven to 450°F and bring the water to a simmer while the dough rises.
  6. Punch down the dough and cut it into eight pieces; roll each piece into long ropes and shape into pretzels.
  7. Boil each pretzel in the baking soda solution for about 20 seconds using a slitted spatula before placing them on a baking tray.
  8. Brush with melted vegan butter and sprinkle coarse salt before baking for 10-15 minutes or until golden brown.
