  • 1 block tofu (firm or extra firm)
  • Avocado oil spray (or other cooking spray/oil)
  • 1 small shallot, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups zucchini, chopped into 1/2-inch half moons
  • 3 cups carrots, peeled + chopped
  • 1 large bell pepper, cored + chopped
  • Salt + pepper, to taste
  • 2 Tbsp toasted sesame oil
  • 3 Tbsp tamari or soy sauce
  • 1/2 tsp ground ginger (or 1 tsp freshly grated)
  • 1 Tbsp rice vinegar
  • 2 tsp cornstarch (or other thickening starch)
  • Chopped green onion (optional)
  • Chopped parsley (optional)
  • Toasted sesame seeds (optional)

Instructions

  1. Press tofu to remove excess moisture and cut into cubes.
  2. Mix cornstarch with water and whisk together sauce ingredients.
  3. In a large pan, heat oil and cook tofu until golden brown; remove from pan.
  4. Sauté shallots and garlic until fragrant, then add zucchini, carrots, and bell pepper; cook until tender.
  5. Return tofu to the pan, add sauce, and toss well; cook for an additional 3 minutes.
  6. Serve hot over grains or noodles if desired.
